Cabbage and Kielbasa


This is a super yummy dish and oh so good for you (well, mostly ;-).

You will need:
1 head red cabbage, diced or shredded
1/2  medium onion, diced
1-2 Tbsp butter/margarine
2 cups apple juice
1/4 cup brown sugar (not exact measurement, but close)
1/4 cup red wine vinegar (not exact either)
3 medium fuji apples, diced (or whatever brand apple you prefer, sweeter is better)
1 pkg favorite brand smoked sausage/kielbasa

What you do:
Toss onion into pan with butter, when they are sweating (not transparent) add the cabbage.  Whisk the apple juice, brown sugar, and vinegar together.  You can toss some red wine in as well.  Pour the juice mix into the pan with cabbage and onion.  Bring this all to a boil, cover and simmer on medium low (I like my cabbage pretty mushy, so adapt here for your preference) for 20 min.  After the 20min mark, add diced apple and sliced meat.  Bring to a boil again and simmer another 20min.  This time on low so as not to over cook the meat.  Serve warm and our favorite side with this dish is home made spatzle.
