Hush Puppies
I adapted an old recipe for hush puppies that my family has enjoyed whenever I get them done. I like seasoned puppies but if you prefer more bland, then cut back or cut out the seasoning all together.
You Need:
1/2 cup cornmeal
1/2 cup AP flour
2 Tsp granulated sugar
3/4 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 beaten egg
1/2 buttermilk
greek seasoning and italian seasoning
chopped green onion (optional)
Blend dry ingredients, this is where you can either add more of or take away the greek and italian seasoning. In separate bowl beat egg and mix in buttermilk. Stir dry and wet till JUST moist, it will be lumpy and gooey, that is good :-) Preheat your oil to 350-375 (a thermometer that snaps onto your pot is a great idea), drop apx 1 inch balls/globs into your oil. Roll them over when underside is nicely browned. If you make the size too big, the center may be gooey or your outside may get overdone trying to avoid the goo. Fish out the brown hush puppies with a spider (slotted spoon or even tongs) and place them on paper towels or whatever to let the excess drain off. Enjoy!!
