Basic Red Sauce

                                                                
I use this basic red sauce for many dishes, the only thing that may change is the tomato product I use as the base.  Pictured on your left is the crushed tomato as marinara, on your right is the pizza sauce version with tomato paste.  You can use this with spaghetti, pizza, dipping sauce for garlic bread.. whatever!  Now remember that my recipes basically feed 2 adults and 4 children.  You can adapt amounts of stuff for your size household.  And as always, omit whatever you don't wish to use.

You Need:
2 large cans of tomato paste (for pizza sauce) or 2 large cans of crushed tomato (for marinara)
2 cloves garlic, crushed (or same amount minced garlic)
1-2 Tbsp butter
half a medium green pepper, chopped (I grind the veggies very fine when making pizza sauce)
half a medium onion, chopped
4 large mushrooms
Mrs. Dash, yellow top
Greeks Seasoning, low sodium
Italian Seasoning (I have this shipped in from a little Italian store in Iowa called Graziano's)
dash salt
1 Tbsp sugar

Directions:
Place the chopped veggies into a sauce pan with 1 tsp of butter and sweat them till onion begins to be opaque.  Add the mushrooms, saute to desired consistency.  Toss in the cans of tomato product then sprinkle like a snow dusting across the top of the pan the seasonings, your dash of salt, and the sugar.  Stir on low heat to avoid explosions.  Serve warm however you wish to serve it ;-)
